Creamy Tuscan Pork Chops

Ingredients
2 tablespoons olive oil
4 boneless center-cut pork chops (about 6 ounces each)
1 can (14.5 ounces) diced tomatoes with roasted garlic & onion
1 cup packed baby spinach
1 can (13.5 ounces) unsweetened light coconut milk
1/3 cup grated Parmesan cheese
Directions
- In large skillet, heat oil over medium-high heat. Add pork chops; cook 5 minutes or until browned, turning once. Transfer pork chops to plate.
- In same skillet with drippings, cook and stir tomatoes with their juice and spinach 2 minutes or until spinach is wilted; reduce heat to medium. Whisk in milk and cheese; cook and stir 5 minutes or until slightly thickened. Makes about 2 cups tomato mixture.
- Add pork chops back to skillet; cover and cook 5 minutes or until internal temperature of pork chops reaches 145°. Makes 4 pork chops.
- Serve pork chops topped with tomato mixture.
