Ingredients
2 eggs
1 cup unsweetened applesauce
3 really ripe bananas, mashed (this is about 1 1/4 cup)
1/2 cup Splenda® Monk Fruit Sweetener
2 tsp pure vanilla extract
2 cups all-purpose flour
2 tsp cinnamon
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 cup chopped walnuts
Directions

1. Preheat oven to 350º

 

2. In a small bowl, whisk together dry ingredients: flour, cinnamon, salt, baking powder, baking soda, and walnuts.

 

3. In a medium bowl, beat eggs, applesauce and mashed bananas with a whisk or a fork. Whisk in sweeter and vanilla. Gently add all of the dry ingredients, and using a spatula, stir just until combined, being careful not to over mix (batter will still be lumpy).

 

4. Pour batter into a bread pan sprayed generously with nonstick cooking spray. Bake for 1 hour, or until a toothpick comes out clean in the middle.

 

5. Remove from pan and let cool. Serve banana bread slices warm. Enjoy!
