Pumpkin Horchata Panna Cotta

Ingredients
2 cups heavy cream
1 cup whole milk
1/2 cup granulated sugar
1 tsp Wholesome Pantry Organic Ground Cinnamon ( plus a dash for topping if desired )
1 tsp Wholesome Pantry Organic Pure Vanilla Extract
1 cup pumpkin puree
1/2 cup Horchata
2 1/2 tsp gluten-free unflavored gelatin
whipped cream, optional toppings
pumpkin seeds for garnish
Directions

1. In a saucepan, combine the heavy cream, whole milk, granulated sugar, Wholesome Pantry Organic Ground Cinnamon, Wholesome Pantry Organic Pure Vanilla Extract, pumpkin puree, and Horchata.

 

2. Heat the mixture over medium heat, stirring occasionally, until it reaches a gentle simmer. Do not let it boil.

 

3. In a separate small bowl, sprinkle the gelatin over 1/4 cup of cold water. Let it sit for a few minutes to bloom.

 

4. Once the gelatin has bloomed, add it to the simmering cream mixture and whisk until the gelatin is completely dissolved.

 

5. Remove the saucepan from heat and let the mixture cool slightly, stirring occasionally to prevent a skin from forming.

 

6. Once the mixture has cooled, strain it through a fine-mesh sieve into ramekins or serving glasses.

 

7. Refrigerate the panna cotta for at least 4 hours, or until set.

 

8. Optional: Before serving, garnish with a dollop of whipped cream, a sprinkle of ground cinnamon, and a few pumpkin seeds for added texture and presentation.

 

9. Serve chilled and enjoy!
