Ratatouille & Wheat Berry Salad with Feta

1/2 cup dry wheat berries
1 Tbs raw pine nuts
1 package (5 ounces) ShopRite Store Made Grilled Vegetables, chopped
1/4 cup halved red seedless grapes
1/4 cup packed baby arugula
3 Tbs crumbled feta cheese
3 Tbs organic balsamic vinaigrette dressing
1 tsp chopped fresh parsley
1/2 tsp chopped fresh thyme
1 Wholesome Pantry rotisserie chicken (optional)
Directions
1. Prepare wheat berries as label directs; fluff with fork. Transfer to large bowl; cool.
2. In small skillet, toast pine nuts over medium-high heat 4 minutes or until lightly browned and fragrant, stirring frequently; transfer to plate to cool.
3. Fold remaining ingredients and pine nuts into wheat berries.
