Ingredients
2 Wholesome Pantry Organic Avocados
1 bag of Wholesome Pantry Organic Gala Apples
1/2 cup Wholesome Pantry Organic Celery
1/2 cup Wholesome Pantry Baby Organic Carrots, chopped
1/2 cup garbanzo beans
1/2 cup cannellini beans
salt to taste
pepper to taste
Wholesome Pantry Organic Chives as garnish
Directions

1. In a large bowl, combine 1/2 cup garbanzo beans, 1/2 cup cannellini beans, 1/2 cup Wholesome Pantry Organic Celery, chopped, and 1/2 cup Wholesome Pantry Organic Baby Carrots, chopped.

 

2. Cut 2-3 Wholesome Pantry Organic Avocados in half and, using a spoon, scoop out the insides. Dice avocado and reserve the skin. Add to the bowl with the beans.

 

3. Add salt and pepper (and, if serving later, lime juice to preserve the avocados) and gently toss the beans and veggies. Scoop the salad into avocado “boats” and garnish with fresh Wholesome Pantry Organic Chives

 

4. Serve with Wholesome Pantry Organic Gala Apple slices and enjoy!
